Ingredients to make Cholia Paneer
Chickpeas / Chane – 1 bowl
Paneer cubes – 1 bowl
Onion finely chopped – 1
Tomato – 3-4
Ginger – 1/2 inch piece
Fresh fenugreek leaves – 2 tbsp
Cashew – 1 tbsp
Coriander powder – 1/2 tsp
Red chili powder – 1 tsp
Turmeric – 1/2 tsp
Vegetable masala – 1 tsp
Chopped green garlic – 2 tbsp
Green chili – 3
Coriander leaves – 2 tbsp
Asafoetida – 1/2 tsp
Garam masala – 1/4 tsp
Dry mango – 1 tsp
Cloves – 2-3
Cumin – 1/2 tsp
Bay leaf – 1
Cinnamon – 1/2 inch piece
Desi ghee – 1 tbsp
Oil – 1 tsp
salt – as per taste

How to make Cholia Paneer
To make cholia paneer curry full of taste, first of all take chickpeas/chickpeas and clean them and wash them two-three times with water. Now prepare a paste by grinding chopped tomatoes, cashews and green chillies with the help of a mixer. Now take out this paste in a bowl and keep it aside. After this, put 1 teaspoon of oil in the pressure cooker and heat it on medium flame. After the oil is hot, add cloves, bay leaves, cumin, cinnamon and fry for a few seconds.
After this, add finely chopped onions, green garlic and fry them till they turn golden. Then add fenugreek leaves, red chili powder, coriander powder, turmeric and other dry spices to it, mix with the help of a spoon and cook while stirring. When the aroma starts coming from the spices, add tomato-cashew paste and let it cook. After some time add ghee/butter to the gravy. After this, cook the gravy till the ghee leaves.

After leaving the ghee of the gravy, add salt and chickpeas as per taste. If using chickpeas, soak them in water overnight and use them only. After cooking it for 1-2 minutes, add some water and cover the lid of the cooker and apply 4-5 whistles. As long as the whistles are coming in the cooker, cut paneer pieces and fry them golden in ghee.

After the cooker whistles, turn off the gas and let the pressure release on its own. After the pressure is released, open the lid of the cooker and add fried paneer to it and mix it well. Now put the cooker again on medium flame. Now add dried mango powder and garam masala to the vegetable and cook. After one to two minutes, turn off the gas and take out the vegetable in a serving bowl and garnish it with green coriander leaves. Cholia paneer is ready to serve.
